| Southwestern Dinner Eggs I made this up and it was really really easy. First I made the pepper sauce by pureeing several red, green and yellow bell peppers with 1 jalapeno pepper and 1 adobo chili pepper and garlic. Plus random spices in the cabinet. I prefer using any of my Penzey's spices. Then I put 1 piece of Ezekial 4:9 Sprouted Grain Bread in the toaster. Heat 1 tbsp of coconut oil in pan and cook 2 eggs in them over easy. Mash up 1/2 avocado and slice 2 slices tomato Assemble: Bread on Bottom Avocado spread on top tomato a little cheese eggs pepper sauce other slice of tomato rest of the avocado more sauce done! About 473 Calories, 17 grams of protein, 24 carbs, 36 grams of fat, 9 grams of fiber, 1 gram of sugar |
