Being a vegetarian is hard...

While my husband and I were on the trail last weekend, we talked about how we were eating way too much meat.  I had the BRILLIANT idea of being vegetarian for one week.  That's all, 1 week! Turns out it's harder than it sounds.  ESP when you want to grab something quick fast food.  You can do chicken EASY, but no meat at all? Sure, there are options, but they just don't sound as appealing. 

This far, I've given my husband a hall pass to just eat Tuna and Chicken and cut out the red meat for the week.  We need to detox.  I've actually been doing ok at this. 

Monday
Didn't count, I started Tuesday when the work week started.  Yay 4th of July!

Tuesday
Breakfast was my Kashi berry cereal and strawberries
Snack - Banana 
Lunch - I went to Zoe's Kitchen and had the salad/hummus plate (which was so tasty)
Dinner - I had a vegetarian Pizza at Schlotzky's Deli. 
Sweet treat - Skinny Cow White Mint bar 

Wednesday
Breakfast - Orgain Shake (amazing, you have to try the chocolate)
Snack - Banana
Lunch - Kashi Spicy Chicken Enchilida
Snack - Strawberries
Dinner - Amy's Texas Veggie Burger with a salad
Sweet treat - Skinny Cow White Mint bar

So, Tuesday and Wednesday I've done good.  Let's just see how the rest of the week goes!
